Sfoglini makes dried pasta in New York's Hudson Valley, and its Pasta Club is a way to get the brand's shapes delivered regularly. The pasta itself is the main reason to sign up. Sfoglini uses organic durum semolina, pushes the dough through bronze dies so each piece has a rough surface that holds sauce, and dries it at low temperatures for more than nine hours. Respected Italian producers use these same traditional methods, and they usually give a firmer bite than standard supermarket pasta. The range goes well beyond spaghetti and penne. It includes less common short cuts such as trumpets, reginetti, cavatelli, malloreddus and bigoli, along with flavored and heritage grain versions made with porcini, rye, saffron and einkorn.
